August's Top 5 Seasonal Foods & How To Cook Them

August is a month of plenty when it comes to tasty seasonal ingredients. Coming up with a list of the top fine was tricky and made me really hungry, but here it is. August's pick of the crop and our suggestions on how to enjoy them!

SARDINES

These fish are much prized on the continent for their intense flavour and affinity with good olive oil, lemon and a cold glass of beer or wine.

One of the healthiest fish around, jam packed with brain and heart happy fish oils.

Sardines are best cooked simply and quickly in a pan or on a grill/BBQ and as already alluded to, are incredible with just a glug of extra virgin olive oil and a squeeze of lemon.

CRAB

The flavour of a British Brown crab is thought to be among the best in the world. There is an interesting contrast between sweet white meat and salty, earth brown meat and something sensual about removing the very last of the sweetest meat from the claws.

A ready made dressed crab is one of the most impressive light lunches you can serve simply add a small dressed salad and some good quality mayonnaise on the side.

VENISON

This ultra healthy meat is packed with high quality protein and packs a flavour punch too.

For dinner parties moving into Autumn nothing is more reminiscent of the changing seasons in the British countryside than well cooked, naturally matured venison.

Some of August's seasonal berries pair excellently with venison and fabulous sauces and gravies can be made with redcurrants and blackberries.

SEA BASS

A firm favourite all year, sea bass is at its very best in August.

A versatile, white fish with a subtle flavour which pleases even those fussy about fish.

The perfect BBQ fish wrapped in foil with sliced fennel and butter or simply pan fried and served with Thai stir-fried vegetables.

COD

With the arctic sea ice at its furthest North the cod catch is at its finest and we see the very jewel in August's crown.

Cod is by far the most popular of the white fish due to its large, meaty, white flakes and subtle flavour, you name it, you can put it with cod.

Personal favourites include fish curry, cheesy fish pie and my all time favourite, Roast cod with a pesto crust.

Other seasonal ingredients to get creative in the kitchen include:

  • Blackberries

  • Blueberries

  • Mangetout

  • Peach

  • Peas

  • Red currants

  • French Beans

  • Aubergine

  • Mackerel
